Mexican Salsa Recipe for Canning: A Guide to Preserving Flavors

– 1/4 cup of lime juice

Preparation

1. Wash and Dice the Vegetables: Begin by washing the tomatoes, bell peppers, onions, and jalapeño peppers. Dice them into small pieces to ensure even cooking and flavor distribution.

2. Chop the Cilantro: Rinse the cilantro and chop it finely.

3. Prepare the Lime Juice: Squeeze the limes to extract the juice.

4. Combine the Ingredients: In a large pot, combine the diced tomatoes, bell peppers, onions, jalapeño peppers, cilantro, lime juice, garlic, cumin, salt, chili powder, paprika, and cayenne pepper (if using). Stir well to combine all the ingredients.

4. Process the Jars: Place the sealed jars in a water bath canner. Make sure the water level is at least 1 inch above the jars. Bring the water to a boil and process the jars for 15 minutes, depending on your altitude.

5. Cool and Store: After processing, remove the jars from the canner and let them cool on a wire rack. Once cool, check the seals by pressing on the center of the lids. If they are concave and do not move, the jars are sealed properly. Store the canned salsa in a cool, dark place for up to one year.
